Sweet, spicy pineapple jerk sauce made with jerk marinade, pineapple juice, and beer. Perfect for oven-baked jerk chicken, wings, ribs, and grilling!

Pineapple Jerk Sauce

This Pineapple Jerk Sauce has become one of my go-to sauces whenever I’m making oven-baked jerk chicken or pineapple jerk chicken wings for family gatherings, game nights, or casual weekends at home. Every time I serve it, someone asks for the recipe; it’s truly a crowd-pleasing Caribbean favorite.

If you love bold Caribbean flavors with the perfect balance of sweet, savory, and spicy heat , this homemade Caribbean pineapple jerk sauce is a must-try. Made with jerk seasoning , pineapple juice , brown sugar , butter , and beer , it delivers deep flavor with a touch of smoky sweetness that clings beautifully to chicken, ribs, and even vegetables.

I love brushing this sauce over my oven-baked jerk chicken during the last few minutes of cooking, or tossing crispy jerk chicken wings in it for a sticky, finger-licking finish. It also works wonderfully as a glaze for grilled meats or a drizzle over roasted veggies, instantly turning simple meals into something special with authentic Caribbean jerk sauce flavor .

Tiffany’s Tips for Best Flavor

  • Choose your beer wisely: Light lagers or pale ales work best; no stouts or heavy ales that overpower the sauce. My choice of beer is typically Corona for this recipe.

  • Adjust heat smoothly: If your jerk seasoning is extra spicy, mellow it with a touch of honey or extra brown sugar; don’t let heat overpower the tropical notes.

  • Fresh vs. canned juice: Fresh pineapple juice adds brightness; canned juice is sweeter and richer. Both work.

What can I use Pineapple Jerk Sauce for?

This sauce is great for:

  1. Grilling or glazing chicken, shrimp, or pork.

  2. Drizzling over oven baked or grill jerk chicken.

  3. Using as a dip for plantains, fries, or wings.
