Packed with sweet raisins, fluffy jasmine rice, crisp bell peppers, and warming Caribbean spices, this easy-to-make rice dish is perfect for summer BBQs, family dinners, or as a flavorful side to grilled chicken, shrimp, or fish.

Ingredients

For the rice base:

  • 2 cups jasmine rice, washed
  • Water, as needed for cooking rice
  • 1 tsp oil
  • 1 tsp turmeric
  • ½ tsp Goya Sazón with Azafrán
  • 1 tsp salt

For the stir-fry:

  • 3 tbsp olive oil
  • 3-inch piece fresh ginger, peeled and grated
  • 4 cloves garlic, finely chopped
  • ⅓ cup onion, finely chopped
  • ⅓ cup red bell pepper, diced
  • ⅓ cup green bell pepper, diced
  • ⅓ cup yellow bell pepper, diced
  • ⅓ cup mixed vegetables (carrots and green beans only)
  • 3 tbsp whole kernel corn, drained
  • ¼ cup sun-dried raisins (adjust to taste)
  • 2 tsp chicken bouillon (or to taste)
  • 4 scallions (green onions), thinly sliced
  • Salt and black pepper, to taste
  • Optional: ½ tsp red pepper flakes

Garnish:

  • Fresh parsley, chopped

Instructions

Step 1: Cook the Yellow Rice

  1. 1Rinse the jasmine rice thoroughly and add it to your rice cooker or pot.
  2. 2Add turmeric, Sazón with Azafrán, salt, and 1 teaspoon oil.
  3. 3Add water according to your rice cooker or package instructions for 2 cups of rice.
  4. 4Cook until tender and fluffy.
  5. 5Spread the cooked rice onto a tray or pan and allow it to cool completely, or refrigerate until chilled. Tip: Cold rice fries better and prevents clumping.

Step 2: Stir-Fry the Rice

  1. 1Heat the olive oil in a large sauté pan or wok over medium-high heat.
  2. 2Add the onion, ginger, garlic, bell peppers, and mixed vegetables. Sauté for 3-4 minutes until fragrant and slightly softened.
  3. 3Add the cooled yellow rice and stir-fry for 2–3 minutes, breaking up any clumps and coating the grains with flavor.
  4. 4Stir in the corn and raisins until evenly distributed.
  5. 5Add the scallions and sprinkle in the chicken bouillon ½ teaspoon at a time, tossing well after each addition. Taste and adjust as needed, then continue stir-frying for 1–2 more minutes until everything is well combined and heated through.
  6. 6Season with salt, black pepper, and optional red pepper flakes to taste if needed.

Step 3: Garnish and Serve

  1. 1Transfer to a serving dish.
  2. 2Garnish with freshly chopped parsley.
