Ingredients

  • 2 ½ cups jasmine rice (for natural sweetness)
  • 2 tsp olive oil
  • 1 ½ tsp fresh ginger, grated
  • ½ tsp turmeric
  • 1 packet Goya Sazón with Azafrán
  • 6 cloves garlic, finely chopped
  • ⅓ cup red onion, finely chopped
  • ⅓ each of red, green, and yellow bell peppers, diced into small squares
  • 1 cup mixed vegetables (carrots and green beans only)
  • ¼ cup whole kernel corn
  • ⅓ cup sun dried raisins (adjust to taste)
  • ½ tsp butter
  • ¼ cup olive oil (for frying)
  • ½ tsp chicken bouillon
  • 4 scallions (green onions), thinly sliced
  • Salt and black pepper to taste
  • Garnish with fresh parsley, chopped
  • Optional: For a spicy kick, add any hot pepper of your choice, finely chopped

Instructions

Step 1: Cook the Rice

  1. 1Rinse the jasmine rice thoroughly and add it to your rice cooker.

  3. 3Add water according to your rice cooker’s instructions for 2 ½ cups of rice.

  5. 5Once cooked, spread the rice onto a foiled tray or pan to cool to room temperature, or refrigerate until fully chilled. Tip: Cold rice is perfect for frying to avoid clumping!

Step 2: Prepare the Stir-Fry

  1. 1In a large sauté pan or wok, heat ¼ cup olive oil over medium-high heat.
  2. 2Add the diced bell peppers, garlic, red onion, mixed vegetables (carrots and beans), and sauté for 2–3 minutes until slightly softened.
  3. 3Add the cooled jasmine rice and stir-fry for another 2–3 minutes, ensuring the rice absorbs all the flavors.
  4. 4Stir in the corn and raisins, mixing well.
  5. 5Add butter, chicken bouillon, and sliced scallions. Continue frying for 1–2 more minutes.
  6. 6Season with salt, black pepper, and optional hot pepper to your desired heat level.

Step 3: Garnish and Serve

  1. 1Transfer to a serving dish.
  2. 2Garnish with freshly chopped parsley.
