Description

This spicy and creamy macaroni salad is a bold Caribbean-inspired twist on the classic picnic side dish. Made with tender elbow pasta, crunchy vegetables, and a creamy, slightly spicy dressing, this easy macaroni salad is perfect for BBQs, potlucks, and weeknight dinners.

Ingredients

For cooking the pasta:

  • 3 cups elbow macaroni
  • 8 cups of water
  • 5 teaspoons salt

For the Finely Chopped Base:

  • ½ small onion
  • 2 stalks celery, washed and chopped

For the Vegetables & Mix-Ins

  • ¼ red bell pepper, diced
  • ¼ green bell pepper, diced
  • ¼ yellow bell pepper, diced
  • ½ medium carrot, peeled and grated
  • ¼ cup whole kernel corn
  • ¼ cup raisins, roughly chopped

For the Dressing:

  • 2 cups mayonnaise
  • ½ teaspoon yellow mustard
  • ½ teaspoon smoked paprika
  • 2 tablespoons brown sugar
  • 1 teaspoon Tony Chachere’s Creole seasoning (start with ½ tsp, adjust to taste)
  • Salt, to taste
  • Black pepper, to taste

For Garnish

  • Fresh parsley, chopped

Instructions

Step 1: Cook and Chill the Macaroni

  1. 1Bring a large pot of salted water to a rolling boil. Add macaroni and cook until just al dente (tender with a slight bite).
  2. 2Drain and rinse under cold water until fully cooled to stop cooking and prevent gumminess.
  3. 3Transfer to a bowl, cover, and refrigerate at least 2 hours or overnight until fully chilled.

Step 2: Finely Chop the Onion and Celery

  1. 1Add onion and celery to a food processor and pulse until very finely chopped (almost minced). Do not add water.
  2. 2Alternatively, finely mince by hand with a sharp knife until very small. Set aside.

Step 3: Prepare the Remaining Vegetables
