Ingredients

  • 2 tbsp white wine
  • ½ tsp paprika
  • ¼ cup flour
  • 3 tbsp olive oil
  • ½ medium onion, thinly sliced
  • 5 garlic cloves, minced
  • 3 scallions, chopped (white and green parts separated)
  • 1 tablespoon celery (tender stem), washed and finely chopped
  • 8 pimento seeds (or ¼ tsp ground allspice)
  • 2 small bay leaves
  • ⅓ piece red + ⅓ piece green bell pepper, sliced
  • ½ cup cherry tomatoes, halved
  • 1 tsp fresh thyme leaves
  • 1 sprig fresh rosemary, leaves stripped from the stem and finely chopped
  • ¼ tsp red pepper flakes (or more for extra heat)
  • 1.5 cup of warm water or broth
  • ½ tsp chicken bouillon (or cube)
  • 1 tsp freshly squeezed lemon juice
  • Fresh parsley chopped, for garnish
  • salt and black pepper, to taste
  • Optional: pinch of unsalted butter, added flavor

Instructions

Step 1: Season & Sear the Fish

  1. 1Clean your fish and pat dry. Season with salt, pepper, and paprika. Lightly coat in flour. Heat oil in skillet and sear fillets for 2–3 minutes per side until golden. Gently remove and set aside.

Step 2: Sauté Aromatics and Tomato Paste for the Sauce

  1. 1In the same pan, add the onion, garlic, and bell peppers, and sauté for 2–3 minutes until fragrant and slightly softened.
  2. 2Stir in the tomato paste and let it cook for another 2–3 minutes, stirring continuously to prevent burning. If the mixture looks too dry, add a splash of oil to keep everything cooking evenly.

Step 3: Deglaze the Pan and Build the Sauce
